Some cast iron cauldron magic for Halloween: Irish colcannon, prepared in a Griswold #8 dutch oven. Colcannon was traditionally prepared as a Samhain dish, though it's made in the Emerald Isle at all times of the year -- because it's very easy to make, inexpensive, and delicious. I like to describe colcannon as "extreme mashed potatoes," because that's what we have here: good old russet potatoes, with onions, spinach, cabbage, and lots of sausage added in. Irish cuisine is known (like it or not) for boiling the heck out of everything, and colcannon is about as Irish as you can get.
